Simple detox salad with lemon dressing

Roughly chop:

1 large red or yellow capsicum

¼ of a red cabbage

3 radishes

1 carrot

1 small head of broccoli

2 small cucumbers

½ a cup of coriander or mint

3 tablespoons of raw cashew nuts or walnuts

1 tablespoon of sesame seeds.

1 ripe avocado

Add the following to a clean jar with a screw top lid:

¼ cup of extra virgin olive oil

¼ freshly squeezed lemon juice

The grated rind of ½ a lemon

Pinch of salt

Shake until combined.

Pour onto your detox salad just before eating!
